Japan's Yakitori Destination

As Japan's "Yakitori Town," Nagato lays its claim to fame in its remarkable number of yakitori-serving restaurants: the greatest number per ten thousand residents!
Serving a plate of grilled chicken skewers with cabbage without a word is standard in many of these restaurants.
The yakitori is often served not with the more typical scallions, but with onions instead.

What makes Nagato's yakitori so delicious?

When making the traditional dish of kamaboko, a kind of fish cake, Nagato's craftsmen would give the resulting leftover bits of fish to their chickens as feed, because it was both plentiful and inexpensive.
This particularly nutrient rich type of feed eventually gave rise, it is said, to Nagato's particuar poultry farming practices and products. Today, Nagato's Fukawa Poultry Farming Cooperative boasts Western Japan's largest production of broiler chickens, including the local breeds Choshu-jidori and Choshu-kuro-kashiwa, which are both highly praised for their juiciness and flavor.
